My Story

My father was a traveling chef who immigrated from France.  He met my mother chef-ing in Dublin, Ireland.  Together they made me and my brother in Mobile, Alabama.  I grew up most my life in the great state of Louisiana. 

 

I like to add a pinch of style from the southern comfort foods, as well as the Cajun influences I grew up on.  I'm proud to follow in my father's footsteps of fine cuisines.  And I'm proud of my little brother who was the first of our family to go to college.

I love food in America.  America certainly is a melting pot of so many cultures, foods, and ways of life.  The greatest place on earth, with the greatest foods!

My father always said, "Young man, this dish is fit for princes."  While my childhood neighbor always said "Son, this hot sauce bout to knock you off you ass."

My family culture was so different from the local culture, but combined you got all the combinations of cultures and backgrounds that bring forth the gift that is American Food.
